Arugula Pesto

Take a few peeled garlic cloves, a couple handfuls of raw pumpkin seeds, (pine nuts, walnuts, or pistachios all work as well), and blend with a few tablespoons of olive oil. Add more oil as needed, you want a nice paste but not soup. Once blended, add a couple handfuls of arugula and puree! Again, add more oil as needed. Once nicely pureed add a bunch of grated parmigiana cheese. Puree, add salt to taste and Presto Pesto! I am putting it on roasted parsnip, but you could put it on ravioli or even a pesto pizza!
