Maple Sweetened Cornbread

Preheat oven to 400 and spray or butter a small pan (8 inch-ish), or a cast iron skillet. Mix the dry ingredients together in one bowl: 1 cup cornmeal, 1 cup flour, 1 TBSP baking powder, 1/2 tsp salt. Whisk these wet ingredients together in another bowl: 2 eggs, 1/3 cup maple syrup, 2/3 cup milk, 1/3

cup vegetable oil. Combine the dry and wet quickly, using as few strokes as possible. Scrape the batter into the prepared pan and bake for 20 minutes, (until golden brown).
