Sweet Potatoes with Sumac & Friends

Spice Profile: aleppo pepper, anchos & pasillas, paprika, onion, garlic, black and green peppercorns, sumac, marjoram, thyme, coriander, rosemary, salt

This is so simple and yet so very flavorful. When you start with great ingredients the flavor just follows. Here I chopped the sweet potatoes into chunks, I like irregular patterns to add interests. Then toss them in some olive oil and salt and roast them in a 375 degree oven, stirring occasionally, until golden brown. While they are roasting, combine a half cup of plain Greek yogurt with the juice of one lime and a couple tablespoons of water. Mix well and add the Sumac and Friends, (2 tsps), plus some salt to taste. Pour this mixture over the finished sweet potatoes and enjoy!
