Fresh Tomato Ketchup
Spice Profile: allspice, cayenne, cloves, garlic, mustard, onion
This recipe uses paste tomatoes, (aka plum tomatoes), the more pointy, egg-shaped ones. Coarsely chop 2.5 lbs. ripe plum tomatoes & transfer to a saucepan or deep-sided skillet (the wider the pan, the shorter the simmer time). Add 2-3 TBSP maple syrup or brown sugar, 2-3 TBSP apple cider vinegar, 2 tsps kosher salt, & the whole packet (2 tsp) of Stock+Spice ketchup seasoning mix. Bring to a boil, stirring frequently. Reduce heat & simmer for 1-2 hours until mixture reaches desired thickness. Make sure to stir frequently throughout, as tomatoes can scorch easily. Remove from heat & allow to cool. Using food processor or immersion blender, puree until smooth. Transfer to a glass container and store in the fridge. Enjoy!
