This is a great way to enjoy some barbecue that is vegetarian. I began trying to make cauliflower steaks and — DON’T. You only get perhaps one steak and a bunch of fallen apart curds. Instead do this:
Take one medium/large cauliflower, break from the stem the “curds” (the florets), leaving them whole as best as possible. Toss them in a bowl with 1/2 cup oil (olive or other). Add the full spice packet (2 tsp) Stock+Spice Pork Rub & toss well. Set aside. In a separate bowl combine 4 Tbsp maple syrup, 1Tbsp apple cider vinegar (or other) and 1 tsp soy sauce. Mix and set aside. Grill the cauliflower on a medium-hot grill rotating every couple minutes. Some blackening is desired. My grill took about 14 minutes. Once done, remove from heat, combine the cauliflower with the maple sauce & enjoy! This could easily be served on buns or as a side.
