Field Pea Shoot Pesto

Spice Profile: coriander, white pepper, black pepper, sumac, spearmint, lemon zest, nutmeg

This is a delicious topping that you can enjoy now or freeze for later.  You can also substitute other types of greens if you’re a “just the spice” subscriber.  I think an arugula pesto with this spice would be so very good.

To start, I like to toast up the pepitas a little in a pan before adding to the mix.  Chop up 1 garlic scape & 1 shallot, (including the greens), and put them into a food processor.  Add the pepitas & spice packet, (2 tsp Stock+Spice pea shoot pesto seasoning), and puree.  Once combined nicely, with the machine running, drizzle in about 1/4 cup of olive oil.  Roughly chop up the pea shoots and add them in batches to the food processor.  Finally, mix in 1/2 cup Parmesan and salt to taste.  Enjoy!
