Thai Red Curried Asparagus, Radish & Field Pea Shoots
This is fast to make and oh so very good! The veggies stay a little crunchy which is great with the soft rice or noodles. for this recipe, you’ll want to grab a few things from the grocery store, too - soba noodles, (or rice) limes (or lime juice), & unsweetened coconut milk.
Wash & roughly chop the full bunch of asparagus, radishes, and 2-3 garlic scapes. Add to a hot sauté pan with olive oil, and sauté, stirring often, for 6-ish minutes. Add the whole sugar snap peas, and full packet (2 tsps) Stock+Spice Thai Red Curry Blend. Sauté another 1-2 minutes, add 1 (13oz) can of unsweetened coconut milk. Bring to a simmer. Add a good handful of chopped field pea shoots. Serve over rice or soba noodles. Top with lime juice, and salt to taste (or fish sauce!). Enjoy!
