Curried Fingerling Fries
This is so simple and so very delicious.
Give the fingerlings, (2 pounds or less, just portion spice and oil accordingly), a rinse to get any dirt off then cut the potatoes length wise in half. If they are large you can cut them into sections and then in half. Toss the sliced potatoes into a bowl of salted water and let soak for about 20 minutes. This will help the potatoes not stick to the pan. Drain the potatoes and pat dry roughly with a cloth. Return them to a bowl and add 2 or 3 tablespoons of olive oil and the spice packet, (2 tsp Stock+Spice curry fry spice). Mix well and then turn them onto baking pan(s) making a single layer, not stacking. Roast them in a 400 degree oven stirring occasionally until they are golden brown, probably 20 minutes or so. Mix them in a bowl with a tiny bit of oil and then salt to taste. Great with ketchup, mustard, or just by themselves. They are delightful!
