Roasted Asparagus with Sumac & Friends

Spice Profile: aleppo pepper, anchos & pasillas, paprika, onion, garlic, black and green peppercorns, sumac, marjoram, thyme, coriander, rosemary, salt

This is so simple and perhaps the best way to start off asparagus season. Sumac is one of my most favorite spices and imparts a citrus flavor.

Give the whole bunch of asparagus a rinse to get any dirt off, then snap the tough asparagus bottoms off at a tender point just above the butt. I do this by feel, and do each individually as the toughness height varies. Place the asparagus on a cookie sheet, drizzle with olive oil, roll the asparagus to coat, and sprinkle the full spice pack on top, (2 tsp Stock+Spice Sumac & Friends). Place it in a pre-heated 400 degree oven and roast for about 12 minutes or to your desired texture. There really is no wrong amount of time, shorter roasting will give you a more “snappy” result, but longer roasting will give you some nice crispy tips. Remove from the oven and enjoy!
