Celeriac & Apple Salad
I love celeriac, it is in the parsley family and has that crisp sweet taste. Great roasted, put in soup, or as a raw marinated salad! Celeriac is very versatile! This week I am peeling the celeriac and cutting it into match sticks. Add a peeled and cored apple cut in the same style, and pour on the juice of a fresh lemon. Finally, top with a tablespoon of olive oil or mayo and salt to taste - toss and serve!
You can also make a mashed celeriac, just peel and cube. Boil and prepare like you would mashed potatoes. Really this veggie is something special and should be enjoyed!
