Parsnip Apple Soup
A very simple way to enjoy parsnips is to wash and roughly cut the roots. Sauté an onion and then add the cut up parsnips. Toss for a minute or two and then add enough water to cover and bring to a boil, reduce to a nice rolling simmer, and cook until the parsnips are tender. Once tender add a cored and peeled apple. Cook for two more minutes and puree. Add more water to give a nice consistency that is not too thick. You can also add meat or veggie stock instead of water. Salt to taste and enjoy!
If you feel ambitious and have left over soup... make a veggie (or meat) pot pie and use the soup as a binder for the meat. I like to roast up the veggies and add them to the pie crust with the soup and then bake!
