Spring Rolls
Spring Rolls are a great way to eat fresh veggies! Simply chop up various veggies--beets, radish, and cucumber. Then I cut up some mango and boiled some thin rice noodles. Finally I purchased some fresh basil leaves which really added a nice touch. Dip rice papers (you can find these in most supermarkets in the Asian food section) in warm water and then place on a cutting board. I will admit that I was not graceful about this, but it all worked out fine. Put some noodles, veggies, fruit, and basil leaves on, and wrap up like a burrito. Rolls will stick together so I try not to let them touch.
For a dipping sauce--the really fun part! I took some peanut butter and added soy sauce, a dash of maple syrup, hot sauce, and a splash of lime. Mix it up and enjoy!
