Spring Pasta e Fagioli with Garlic Scapes

Spice Profile: basil, marjoram, oregano, rosemary, sage, thyme

Fava beans are a large bean that require a little more work, but I think are worth it. Make this one as described or have fun adding things. I added cooked pancetta that I had on hand, but you could add whatever you want. Have fun with it!

Prepare the fava beans, (they have two shells to remove): Shuck the beans from the pod. Blanch by dropping into boiling water for 1 min, then drain & transfer immediately to an ice bath to stop the cooking. Now peel or pinch off the waxy sheath to reveal the bean inside.

Garlic scapes are the flower of the hard-necked garlic plants, and are a springtime delicacy! The whole stem is edible, use as you would garlic. Chop 2-3 scapes and sauté in olive oil until a bit crispy. Add fava beans, (and Italian spices, optional), sauté 3-ish min more. Serve over pasta with Parmesan cheese & garnish with sage blossoms if you wish!
