Garlic Scape Potato Salad with Cilantro & Lime

This is a really fun take on potato salad. It is super garlicy but so worth it. I really am not a big fan of mayonnaise so I am glad that it does not need much.

Chop & boil the russet potatoes, (1-1.5lbs), until just tender, then rinse with cold water to stop the cooking. Hard boil 4 large eggs, peel, then separate the whites from the yokes. Chop the egg whites and set aside. Chop 4-6 garlic scapes and puree them together with the egg yokes, the juice of 1 lime, 2-ish Tbs of mayonnaise and a generous pinch of salt. Dice the red onion, (the green parts too!), & roughly chop the cilantro (1/2 a bunch or so). Gently mix everything together – the potatoes, egg whites, red onions, the pureed dressing, and the cilantro. Add salt to taste and enjoy!
