Celeriac Salad

Flavorful, fresh, healthy. These are the words that come to mind when I reflect on this salad. The lavender in the spice and the honey finish compliment the vinegar and sharpness of the onion. Try this one out!

Give one medium or half a large celeriac a rinse to get off any dirt, and then peel it. I used both a large knife and a small knife for the nooks. After that, chop the celeriac into thin batons (match sticks) and place in a large mixing bowl. Wash, core, and chop into half moons one medium apple, and add to the celeriac. Finally, peel and chop one medium red onion, (yellow works fine, I just think the red is prettier). Combine this with the apple and celeriac. Add 3 Tablespoons white vinegar, 4 Tablespoons olive oil, and the spice pack (2 tsp winter salad seasoning). Toss until well combined. Serve on a plate, sprinkle salt on to taste, and finally drizzle some fresh honey across the top! Enjoy!
