Roasted Rutabaga and Delicata Squash

Spice profile: brown mustard, cardamom, cloves, cumin, fenugreek, garlic, nutmeg, onion, red chile flakes, shallot, turmeric, yellow mustard

Vadouvan, a French style curry, warm, flavorful, and so simple. Peel and chop up one small rutabaga and one small onion. Seed and chop up one medium delicata (leave the skin on). Combine the onion, rutabaga, and delicata in a mixing bowl and coat with about 2 TBS olive oil, the spice packet, (2 tsp Stock+Spice Vadouvan), and a dash of salt. Spread onto parchment paper, or an oiled roasting sheet and roast at 400 degrees for 35-55 minutes depending on your oven—stir occasionally. When the veggies are lightly toasted and tender, remove from the oven and serve. You can put this over rice, over greens, or serve just the way they are. Optionally, top with a spoonful of Greek yogurt! Enjoy!
