Sweet Potato Parsnip Pancake
This is a pretty simple dish to make. The parsnips and sweet potatoes along with the spices came out really well. I cannot stop eating them.
Peel and grate about 1-ish lbs sweet potato (1 medium/large sweet potato). Combine it with 1 lb grated parsnips, 1 finely chopped onion, and at least 6 eggs, (use your discretion, I had a really large sweet potato and added 8 eggs to get a nice slimy consistency). Mix all of this together with the spice packet (2 tsp Sweet Potato Parsnip Pancake Spice), and about a teaspoon of salt. Mix well, and then spoon the mixture into a hot, oiled pan and flatten a little. You can use a little olive oil for a healthier option, or 6 tablespoons of canola oil for a crispy fried texture. Cook, (flipping once), for about a total of 6 minutes or until nice and crisp. Drain on a paper towel and serve warm with sour cream, Greek yogurt topping, or apple sauce. Enjoy!
