Sicilian Style Bruschetta

This is my nod to Sicilian style bruschetta. The added citrus is emblematic of this Italian island. In Sicily you could also find capers or even anchovies in your bruschetta. Let’s get cooking!
Sharpen your knife for this one, we want cuts, not smooshes. Core and dice 2 or 3 fresh tomatoes. Place in a bowl, add 2 TBS olive oil, the spice mix (2 tsp Stock+Spice Bruschetta mix), and a dash of salt. Mix well and taste, add more oil if needed. Toast up some crusty bread, (sourdough or french). Peel one clove garlic. When the bread comes out of the toaster, pass the garlic over the top of the toast grating it into the bread. You don’t need too much. Then top with the tomato mixture and, oh my goodness, enjoy.
