Grilled Maple Rub Cauliflower

This is a great way to enjoy some barbecue that is vegetarian. I began trying to make cauliflower steaks and — DON’T.  You only get perhaps one steak and a bunch of fallen apart curds. Instead do this:

Spice Profile: Allspice, ancho chiles, black pepper, brown sugar, chipotle, cloves, cinnamon, coriander, cumin, garlic, kosher salt, mace, nutmeg, smoked paprika, tomato powder.

Take one medium/large cauliflower, break from the stem the “curds”, (the florets), leaving them whole as best as possible. Toss them in a bowl with 1/2 cup oil (olive or other). Add the full spice packet (2 tsp) Stock+Spice Maple Glazed Cauliflower spice & toss well. Set aside. Grill up one or two whole cleaned scallions and a few garlic scapes. Once those are done finely chop them and place in a separate bowl. To the scapes and scallion add 4 Tbsp maple syrup, 1 Tbsp apple cider vinegar (or other) and 1 tsp soy sauce. Mix and set aside. Grill the cauliflower on a medium-hot grill rotating every couple minutes. Some blackening is desired. My grill took about 14 minutes. Once done, remove from heat, combine the cauliflower with the maple sauce & enjoy! This could easily be served on buns or as a side.
