Braised Cabbage
Spice profile: basil, black garlic, caraway, coriander, fennel, garlic, mustard seed, nutritional yeast, onion, oregano, porcini mushroom, red chili flakes, rosemary
This one is easy to prepare but takes a while in the oven, (2.25 hours), so start early! Coarsely chop up one medium onion and 1-2 carrots, and set aside. Chop up 1 medium cabbage into about 8 or so wedges leaving the center intact. Place the cabbage slices in a large Dutch oven or roasting pan and place the carrots and onion on top. In a bowl combine 1/3 cup water, 1/3 cup olive oil, and the full spice packet (2tsp Stock+Spice Braised Cabbage Seasoning). Mix well and pour over the cabbage. Cover and place in a 325 degree oven for one hour. After one hour, uncover the cabbage and flip the wedges over. Re-cover and place back in the oven for another hour. Then remove the lid, flip the wedges to point side up, and up the heat to 425 degrees. Roast uncovered until you get a little blackening, (about 20 minutes, maybe less). Remove from heat and pour a couple tablespoons of balsamic vinegar over the cabbage wedges. Salt to taste and serve!
