Himmel und Erde (Heaven & Earth)

Spice Profile: coriander, cumin, caraway

For this dish you’ll be boiling & mashing potatoes, turnip, & apple together. Peeling the potatoes & turnip is optional, but recommended if you’re planning to use a “ricer” to mash, (instead of a masher). I learned the hard way that peels don’t go through the ricer well!

Chop 2lbs russet potatoes (2-3 large) and 1 large purple-top turnip. Combine in a pot, cover with water, & bring to a boil until potatoes are just beginning to soften. Add 1 cored, peeled, & chopped apple to the pot & continue to boil until potatoes are soft enough to mash – then drain & mash.  While veggies are boiling, puree 2/3 cup sour cream or Greek yogurt, with a generous handful of chopped spinach, & the full spice pack (2 tsp Stock+Spice himmel und erde seasoning).  Plate the mash, and top generously with the “green gravy”. Great served alongside sausage or veggie sausage! Enjoy!
