Blistered Shishito Peppers

Shishitos are a Japanese pepper whose heritage traces back to the Italian Padróne pepper. The fun thing about these peppers is that about 1 in 10 (maybe more) are medium-spicy, and the rest are sweet. Simple to make and fun to enjoy with friends.

Wash the peppers & put into a medium-hot, dry skillet (I don’t add any oil at this point). Stir frequently until all sides are lightly blistered, (1o-ish mins). Toss with olive oil and salt, serve hot!

You can make these on the grill, too!
