Tomatoes de Campania (Simple Sauce!)
Spice Profile: basil, marjoram, oregano, rosemary, sage, thyme
Remove the tough stem/core from the tomatoes & roughly chop into 1” chunks. Place in a large Dutch oven with 2-ish TBSP olive oil. Simmer on medium-low heat, stirring occasionally for 10-ish mins. Dice 1-2 small onions, 1 sweet pepper (optional) & 2-ish cloves garlic. In a separate pan, sauté onions until translucent, add pepper, sauté until soft, add garlic for 1-ish min more. Add 2 TBSP balsamic vinegar to deglaze the pan, then dump this whole mixture into the tomatoes. Add full spice packet of herbes de campania. Continue to simmer, stirring occasionally, until tomatoes are fully broken down – an hour or so. Using an immersion blender or food processor, puree to your desired consistency. Salt to taste. Enjoy over pasta or on a pizza!
