Cajun Sweet Potato Street Fries
Wash & slice 2.5lbs sweet potatoes into match sticks (about 3 sweet potatoes). Toss with 4 Tbsp olive oil & entire spice packet (2 tsp Stock+Spice Cajun Seasoning). Spread evenly on sheet pans & bake at 375 degrees for 30-40 minutes, mixing occasionally until nice and crispy. Watch to make sure they don’t burn near the end. To serve, drizzle with garlic aioli, or curry ketchup, or add cheese curds & gravy for sweet potato poutine! Enjoy!
Garlic Aioli: Using the blender of your choice, combine 1 room-temp egg, 2 Tbsp lime juice, ½ tsp salt, & 2 garlic cloves. Set aside ¾ cup olive oil. Purée, adding oil 1 drop at a time for 12-ish drops. Increase to a drizzle, continuing to purée until all oil is incorporated & you have a nice thick aioli.
